Technically, you cannot sign out of iCloud email unless you sign out your Apple ID altogether from the device. However, you can turn this iCloud mail off.
Step #1. Open the Settings app on your iPhone or iPad.
Step #2. Tap your name from the top.

Step #4. Tap on the toggle for Mail to turn it off.
